As you know, this is the dish of rice mixed with diced spitchcock eel.
The name “Hitsumabushi” seems to be the registered trademark of “Atsuta Horaiken” in Nagoya.
It’s said this name is from “Mixing (mabusu) with rice in wooden container (Hitsu) of rice”. The way that chopping eels and mixing it in the wooden container existed as a providing meal in Hamamatsu and Tsu before “Hitsumabushi” became general.
